I didn’t try CoreOS as I didn’t even get how to set it up. As I understand it, it uses a completely different workflow for administering the system compared to regular distros.

You can use Fedora IoT which is essentially rpm-ostree based Fedora Server. It would be less confusing if it was just named Fedora Atomic Server.

Although it has always been a pain. Back when I used Nextcloud, I tried Nextcloud Talk which always had less problems for me and was much easier to set up.

Any provider that provides access via IMAP/SMTP works fine with a lot of email clients. I personally use mailbox.org.

As clients you can use Thunderbird, Geary or Evolution on the desktop and FairEmail or K9 (which will become Thunderbird for Android) on Android.
